I've been muddling through with my Instant Pot for the last year or so because the directions that come with it aren't all that precise and because recipes I've found online haven't always worked because they weren't well-adapted for an electric pressure cooker. I decided that it was finally time to buy an actual cookbook that had recipes specifically geared toward the Instant Pot. These recipes are mostly golden, especially since they are precise about the pressure levels, settings, and times both within the recipes and how long the recipe should take. For instance, it will says things like "use natural release pressure for 8 minutes" instead of the less precise "use natural pressure release" that I've discovered often results in overcooked food. I also love the charts in the back that specifically divide dried beans from soaked (I never knew before whether I was seeing dried or soaked bean times) and that offer tips for success. Again, in the case of beans, the author suggests using low pressure for 1 pounds of more to lessen the foamy overflow. I had heard that risotto in the pressure cooker was excellent, and this book proved that to be true. The book contains recipes from all sorts of cuisines: Mexican, Italian, Chinese, and Indian as well as traditional American from the South and New England. Using the recipes from this book has given me more confidence to be able to adapt other recipes to the Instant Pot.I really should have bought this cookbook a year ago, but I'm glad to have it in my kitchen at last.
